Thanksgiving today was a laid-back affair – just myself and the BFF. All in all, we had a lot to be thankful for this year – Chris got a promotion at work and I’m still following my love of writing. We have homes, food, family and friends. What else do we need?
Considering there was just the two of us, we had enough food for six people. The leftovers themselves will keep me from going to HEB for at least that long, I’m sure. By the end of the day, we were stretching, farting and contentedly whining, “I’m so fat!” The feast consisted of:
Moet and Chandon champagne;
with foie gras and cornichons (I should have felt bad about this knowing a.) how much this cost per pound and b.) knowing how the goose was fed to make its liver so flavorful, but ultimately it tasted so good I found my love of animals being replaced by a love of delicious food);
smoked turkey (from The Pit BBQ; I may never cook a turkey again);
roasted duck with spinach and feta stuffing;
cranberry-pecan stuffing;
sauteed asparagus;
hand-made pierogies (Chris and I channeled our grandmas and made the filling and dough by hand; good lord but those women had patience!);
and pumpkin cheesecake (I overcooked it, dammit), rosettes and a raspberry porter trifle.
I hope everyone had a wonderful day and that you thanked someone special for being in your life and thanked whomever for all the good things you have.
